Pumpkin Tortelloni served with butter and sage

  • Boil Water: Fill a pot with salted water and bring it to a boil.
  • Cook Tortelloni: Add the tortelloni and cook for 3–4 minutes (or until they float).
  • Melt Butter: In a pan, gently melt butter over low heat until it starts to foam.
  • Add Sage: Add fresh sage leaves and let them infuse the butter for 1–2 minutes.
  • Combine: Transfer the cooked tortelloni into the butter and sage. Toss carefully to coat.
  • Italian Tip – Pasta Water: Add a splash of pasta water to make the butter sauce extra glossy.
  • Serve: Plate, spoon over the sage butter, add Parmigiano if you like, and enjoy!
