Pumpkin Tortelloni served with butter and sage
- Boil Water: Fill a pot with salted water and bring it to a boil.
- Cook Tortelloni: Add the tortelloni and cook for 3–4 minutes (or until they float).
- Melt Butter: In a pan, gently melt butter over low heat until it starts to foam.
- Add Sage: Add fresh sage leaves and let them infuse the butter for 1–2 minutes.
- Combine: Transfer the cooked tortelloni into the butter and sage. Toss carefully to coat.
- Italian Tip – Pasta Water: Add a splash of pasta water to make the butter sauce extra glossy.
- Serve: Plate, spoon over the sage butter, add Parmigiano if you like, and enjoy!
